Introduction: 

I started making these delicious chicken bacon ranch baked egg rolls years ago. The always a hit and are super easy to make, especially on a weeknight. I make many different varieties of baked egg rolls, but these are my go-to variety.  Who doesn’t like the flavor of ranch dressing?!

Procurements:

  • 12 egg roll wrappers (usually found in the produce section of your grocery store)
  • 2 c. cooked and shredded chicken (I use rotisserie chicken)
  • 1/2-3/4 c. ranch dressing (enough to moisten mixture, but not make it soupy)
  • 1/2 c. shredded mozzarella cheese
  • 1/4 c. french fried onions
  • 6 slices or 1/3 c. cooked and chopped bacon
  • 3 T olive oil
  • 1 t garlic powder
  • 1/2 t salt
  • 1/4 t pepper
  • water for sealing

Operating Procedures:

Heat oven to 425 degrees and line baking sheet with non stick baking mat or spray with non stick spray.

Mix shredded chicken, ranch dressing, mozzarella cheese, french fried onions, and cooked and chopped bacon together in a large

Pull 12 egg roll wrappers from the package and lay under a damp towel so they don’t dry out.  One at a time, lay out the wrapper, fill with 1/4 C of the mixture (give or take how exact you were when adding ingredients).  Do not overfill or the mixture will seep out the sides while baking.

Use a pastry brush to moisten all sides of the wrapper with water.  Fold wrapper like a burrito (fold up 2 edges and roll so that everything is tucked in.) Put filled egg rolls, seam side down, on prepared baking sheet. 

Mix together the olive oil, garlic powder, and salt & pepper together in a small bowl.  Using the same pastry brush, brush the outsides of the egg rolls with mixture.

Bake flipping over halfway through to ensure even browning and crisping. Cook for 15-18 minutes, or until golden brown and crispy all over.

Serve with extra ranch for dipping!

If you haven’t already noticed, I am all about methods that can be changed up! This same method can be used to make all different kinds of baked egg rolls.  The only thing limiting you is your imagination! 

Closing Remarks:

These served with a simple salad makes a terrific and fast weeknight dinner.
