Introduction:

Casseroles are such comfort food.  Pasta and meat coated in a creamy sauce.  Yum.  What’s not to love?  They are especially great for the weeknights because they can be prepped on the weekend and then baked off in the oven while you relax after work.  Since this BBQ Pork and Pepper Jack Mac Casserole contains 1/2 a box of pasta and 1/2 a block of cream cheese, it is especially easy to double.  Add to 2 separate pans and you can easily have one for dinner tonight and one to freeze (before baking) for later. 

Resources:

  • Large pot
  • Strainer
  • Measuring cups (how cute are these?!) and spoons
  • Whisk
  • 2.5 Quart Casserole Dish or 13X9 Baking Dish
  • Stirring spoon
Procurements:
  • 8 oz. block of pepper jack cheese, shredded – separate out 1/2 c. for topping
  • 4 oz. cream cheese
  • 3/4 c. milk
  • 2 T. butter
  • 8 oz. of pasta (1/2 box of pasta), I used ziti
  • 16 oz. package of Jack Daniel’s Pre-made Pulled Pork (or 16 oz. of your own)

Operating Procedures:
 
Start by boiling your pasta to al dente.  Once cooked, strain and add to a greased casserole dish.  In the same pasta pot or a separate skillet, whisk together all but 1/2 c. of the pepper jack, as well as the cream cheese, milk, and butter.  Stir constantly until just combined.

I let my milk, butter, and cream cheese heat up first and then stir in the pepper jack.

 
In your casserole dish, add the cheese sauce over the pasta and gently fold in the pork.  Cover with foil and bake in a preheated 350 degree oven.  After 15 minutes of baking, remove the foil, cover with remaining 1/2 c. of cheese, and cook for an additional 5 minutes.

Closing Remarks:

This BBQ Pork and Pepper Jack Mac is a great way to use up leftover pasta.   The pre-made Jack Daniel’s Pork adds a great dimension of flavor.
