I think steak is often the forgotten meat when it comes to marinade.  Since steak tends to be high in fat, it is quite flavorful even without it.  Marinating, along with some other tips, however, can take an inexpensive slice of meat and make it quite tender and delicious. 

Case in point is flank steak.  It’s easily marinated, versatile, and reasonably priced compared to some other cuts of meat.  It’s most often used in stir fry, or my favorite, beef fajitas.  It’s quite tasty and tender when scored, marinated, cooked to medium doneness, and sliced thin against the grain.   




  • 1 lb. flank steak
  • 1 T. olive oil
  • 1 T. apple cider vinegar
  • 1 T. chili powder
  • 1/2 t. smoked paprika
  • 1/2 t. salt
  • 1/2 t. black pepper
  • 1/4 t. cumin
  • 1 lime – juiced and zested

Operating Procedures:

Begin by prepping the flank steak.  Cut off any excess fat and score the meat on the diagonal from the grain, as also shown in the picture below.  Note that in this picture, the knife is resting parallel to the grain of the meat. 


Next, whisk together all the ingredient from the list above.  Rub the marinade into the meat, making sure you get into all the scoring.  Let chill in the refrigerator for ~4-8 hours before grilling to desired doneness.  Though I recommend medium (160 degrees F) to medium rare (145 degrees F) for tenderness, you can cook up to well done (170 degrees F).  Let rest for 10 minutes before slicing thinly in the opposite direction of the grain of the meat (perpendicular to the knife in the picture above).


Serve up over rice or fajitas style over tortillas with grilled peppers, cheese, and sour cream. 


Closing Remarks:

This marinade can be used on other meats or veggies as well, think chicken, potatoes, cauliflower.  It stirs up quick and has a great tang.  Easy weeknight dinner to prep in the am and eat in the pm.

  1. 1 lb. flank steak
