Introduction:

Greek yogurt seems to be everywhere these days.  Trust me, I’m not complaining.  As a lover of sour cream, though a mayo hater, Greek yogurt makes a great healthy (and quite tasty) substitute for both these ingredients.  For this reason, I find myself buying a large tub of plain non-fat Greek yogurt all the time.  It’s thick and creamy with a nice tang, perfect for sweet or savory eats.  For breakfast, it works great in smoothies or straight up with a drizzle of honey and a bit of crushed pecans.  On taco night, I mix it up with a squeeze of lime juice and a dash of taco seasoning.  More on that another time though. 

This week, I’m skipping the mayo and adding Greek yogurt to this fruity, creamy coleslaw recipe.  To thin the Greek yogurt in this recipe, you will need fresh squeezed orange juice.  So many of my recipes and cooking methods rely on fresh squeezed citrus – lemons, limes, and oranges.  To get juicing, I highly recommend having a reamer in your kitchen.  It gets every last drop of juice out of citrus fruit.  I have a basic wood one, though I’m eyeing up this plastic reamer (aka dishwasher safe). 

Resources:

  • Whisk
  • Mixing bowl
  • Mixing tongs or spoon
  • Measuring cups and spoons
  • Reamer (Optional for juicing the oranges)

Procurements:

  • 1 c. plain Greek yogurt
  • Juice of 1 large orange to yield approximately 1/3 c.
  • 3 T. apple cider vinegar
  • 1 T. olive oil
  • 1 t. honey
  • 1 t. salt
  • 1/2 t. ground black pepper
  • 1/2 t. ground mustard
  • Zest from 1/2 of a large orange
  • 1 lb. coleslaw bagged salad mix
  • 1/2 c. dried cranberries

Operating Procedures:

In a mixing bowl, whisk together the first 9 ingredients from above.  Pour mixture over coleslaw and let chill.  Toss in dried cranberries just before serving.

Closing Remarks:

I believe this slaw gets better with age.  I would recommend making it the night before or at least 8 hours before you need it.  Toss the cranberries in right before serving.  Add additional salt and pepper to taste.

Ingredients
