It seems that you can buy vodka in every flavor imaginable these days…marshmallow, Swedish Fish…I’ve even come across PB&J! I’m not so sure about those flavors, but one of my favorite go to flavors is watermelon. It plays well with others in that it easily mixes with other juices or even lemon-lime pop (you can take the girl out of Pittsburgh…) A few years ago though, I decided to mingle the vodka watermelon with actual watermelon for a picnic happy hour. It was a huge hit and ever since then, I’ve found myself making this recipe quite a few times over the summers.
Start by cubing the watermelon into bit sized pieces. If you prefer, you can use a melon baller, but I ain’t got time for that! Toss on the vodka, chopped mint, and sugar. Mix. Chill for at least 4 hours until cold, stirring at least once or twice to evenly distribute the “marinade”.
Make sure you taste the watermelon when cutting into it. If the watermelon isn’t as sweet as you’d hoped for, you can add more sugar to taste.
- Half of a large watermelon, cut into bite sized pieces
- 1 c. watermelon flavored vodka
- 2 T. chopped mint
- 1 T. sugar
- Combine all ingredients. Chill for at least 4 hours, stirring about every hour or two.
