I’m always looking for easy breakfast ideas particularly for the weekdays.  And, if I can find a recipe lacking some of the extra carbs, it’s a plus!  These Ham & Cheese Omelette Cups are a great addition to the breakfast routine.  Even the kids eat these up!  This recipe makes 4 Ham & Cheese Omelette Cups, but this recipe is easy to double, triple, quadruple, as the heart desires. 



  • 1/4 lb. deli ham, thinly sliced
  • 4 eggs
  • 1/4 c. shredded cheese, such as cheddar
  • 1 scallion, sliced and diced
  • Freshly cracked pepper
  • Cooking Spray

Operating Procedures:

Start by preheating your oven to 350 degrees.  Spray 4 spots in the muffin tin with cooking spray.  Next, you will want to layer each of the sprayed spots with 1-2 slices of ham, forming a little ham bowl around the bottom and sides of the tray. 


One at a time, in a ramekin, add an egg and gently scramble before adding to the ham bowls.  Once one egg is added to each bowl, crack fresh pepper over the tops of the eggs. 


Bake the omelettes for 18 minutes.  Remove the tray from the oven, and add about a tablespoon of cheese to each omelette, and then bake for another 2 minutes.  Remove from the oven, and let cool for about 5-10 minutes.  Run a knife around the edges and lift the omelettes out to cool on a wire rack or serve immediately, topped with freshly cut scallions. 



Closing Remarks:

These can easily freeze to reheat in the toaster oven!  Great breakfast to take along to work.

  1. 1/4 lb. deli ham, thinly sliced
  2. 4 eggs
  3. 1/4 c. shredded cheese
  4. 1 scallion, sliced and diced
  5. Freshly cracked pepper
  6. Cooking Spray
  1. Preheat oven to 350 degrees.
  2. Spray the muffin tins with cooking spray and line the ham on the bottom and sides of each tin.
  3. Pour 1 lightly scrambled egg into each ham "bowl" and add fresh cracked pepper.
  4. Bake for 18 minutes before topping with 1 T. of cheese and baking for an additional 2 minutes.
  5. Remove from the oven and top with scallions.
