Introduction:

Alright, I’m going to tell you one of my secrets to baking.  Alton Brown introduced me to it years ago via Good Eats, and it makes all my baking, not only these sugar cookies, taste fantastic.  Drum roll please….Vanilla Sugar

I like to make a huge batch of this sugar and keep it in an air tight canister in my pantry to use in almost all of my baking.  I love that you can see the vanilla bean in these sugar cookies, along with the zest of the lemon.  I’ve been making these cookies for years, and everyone loves them.  I may have even won a prize or two for this recipe at a work bake-off!  So I can honestly say that they are award winning!!  🙂 

Resources:

  • 2 mixing bowls – 1 for wet and 1 for dry ingredients
  • Cookie sheet
  • Electric mixer
  • Spatula
  • Whisk
  • Measuring cups and spoons
  • Cookie scoop (optional, but you won’t be disappointed by having one.  I use it for a million things in the kitchen.)
  • Lemon juicer
  • Microplane zester

Procurements:

  • 1 stick of butter, softened
  • 1 c. vanilla sugar + 1/4 c – separated
  • 1/3 c. lemon juice – about the juice of 1 lemon
  • Zest of 1 lemon
  • 1 egg
  • 2 c. all purpose flour
  • 1 t. baking soda
  • 1/2 t. salt
  • Cooking spray

Operating Procedures:

Preheat your oven to 350 degrees.  In one of your bowls, cream the butter and 1 c. of vanilla sugar until light and fluffy.  Add lemon juice, zest, and egg and mix until combined.  Set aside your wet ingredients while you whisk together the flour, baking soda, and salt in a separate bowl.  Slowly mix the dry ingredients into the wet ingredients until combined.  If the dough feels a little too soft, refrigerate for 5-10 minutes.  Next, with the cookie scoop or a spoon form the dough into balls and toss to coat in the remaining 1/4 c. of vanilla sugar.  Place the balls on a greased cookie sheet and bake for 8-10 minutes.  This recipe makes about 24 cookies.

Closing Remarks:

These sugar cookies have such a great flavor.  The sugar coating on the outside adds great texture.  Definitely one of my favorite go-to recipes!  Enjoy.
