Introduction:

A few weeks ago was our annual work picnic.  While we all chip in to get a catered lunch, everyone is encouraged to bring dessert.  This year, I was wanting something a little different and these Mexican Chocolate Brownie Bites hit the spot.  They were a big hit among the 9-5 colleagues!

Though I rarely make brownies from scratch, this recipe reminded me that I need to more often.  They are so easy to make, with just a step or two more than a boxed mix!  This recipe adds a little cinnamon and ground red pepper for a hint of extra spice and heat – just enough!

Procurements:

  • 1 4oz. package of unsweetened baking chocolate
  • 3/4 c. salted butter
  • 2 c. vanilla sugar – or white sugar with a t. of vanilla extract added to the brownie batter
  • 3 eggs
  • 1 c. flour
  • 1 t. cinnamon
  • 1/4 t. ground red pepper
  • Cooking spray or Goop – which I’ve been dying to try!

Operating Procedures:

Start by breaking up the chocolate into pieces.  Place the chocolate and the butter into a microwaveable bowl and nuke on half power until just melted.  You don’t want it too hot, or it will curdle your eggs.

Next, whisk the sugar into the butter and chocolate, and finally, whisk in the eggs.  Gently fold in the flour, cinnamon, and red pepper until incorporated.

In a preheated 350 degree oven, cook in WELL GREASED mini muffin tins for 15 minutes or a 13X9 pan for 30-35 minutes.  Don’t over bake or you’ll end up with chocolate hockey pucks!

Closing Remarks:

These make about 24 brownies or about 30 brownie bites.  With the bites, I did have to make them in two batches.  Once the bites come out of the oven, run a butter knife around each bite to loosen before cooling for about 2 minutes and then removing from the pan.
