OK, while my one son is sleeping and the other in time out (for repeated sassiness), I’m sneaking in a quick post here just in time for Mother’s Day – the Mango Bellini.  These are perfect for a Mother’s Day brunch or year round for really!  Any excuse to drink before noon.  🙂


  • Fancy glasses – champagne preferred


  • Champagne or Prosecco
  • Mango Nectar – I bought one can of it from Target

The sweet and syrupy nectar makes the perfect mango bellini.

Operating Procedures:

In your glasses, add mango nectar and then slowly pour over the bubbly.  I like a 2:1 ratio of Champagne to juice. 


Look at that bubbly! Mango Bellini perfection!

Closing Remarks:

Daddies – Go get some Champagne today!  Momma will not be disappointed tomorrow with a Mango Bellini.  Breakfast in bed anyone?

Bubbly and delicious. Champagne or Prosecco mixed with mango nectar juice.

  2. Mango Nectar
  1. Pour the nectar into a glass. Cover with Champagne. Mix should be approximately 1 part juice: 2 parts Champagne.
