Introduction:

One thing that I love about this blog is not only introducing people to new recipes, but also introducing them to ingredients that they may have never tried to cook themselves.  This week, I’m serving up one of our rarer favorites – spaghetti squash.  Though I love it, I don’t make it too often, for whatever reason.  It makes a great side, particularly when you are trying to watch the carbs. 

There are a million different ways that you can prepare spaghetti squash up (I’m still eyeing up those Spaghetti Squash Pizza Boats that are all over Pinterest), but lately, I love to microwave the squash first before quickly sautéing it.  The garlic, balsamic vinegar, and seasonings add great flavor to this Parmesan Spaghetti Squash.

Resources:

  • Large sharp knife
  • Microwavable plate
  • Spoon
  • Sauté pan
  • Silicone Tongs
Procurements:
  • 1 spaghetti squash
  • 1 T. butter
  • 2-3 cloves of minced garlic
  • 1 T. balsamic vinegar
  • 1 t. Italian seasonings
  • 1/4 c. grated parmesan cheese

Operating Procedures:
 
Like you would a baked potato, with your knife, puncture the spaghetti squash in 8-10 places.  Place the whole squash on a microwaveable plate and cook in the microwave for 10-15 minutes – depending on your microwave strength and size of squash.  Let the cooked squash cool off in the microwave for 5-10 minutes before removing and cutting in half lengthwise.  With a spoon, scoop out the seeds and then use your fork to gently shred the squash into strands.

Place your sauté pan on the stove top on med/high heat.  Add the butter and let it melt.  Add the garlic, stirring for about another minute.  Next, add the vinegar, then seasonings, and finally toss in the squash stirring occasionally for 1-2 minutes, so all ingredients are incorporated.  Remove the pan from the heat before stirring in the parmesan cheese.

Ingredients
  1. 1 spaghetti squash
  2. 1 T. butter
