Introduction:

Is it really August 8th already?  I’m really not sure where this summer has gone.  Preston, my oldest, starts Kindergarten in less than 3 weeks!  It’s really hard to believe.  While I’m a little sad he’s becoming such a big boy, it does feel like I’m getting a raise with one less child in daycare!! 

With Preston starting into public school, and Nolan still at an at-home daycare, I feel like my schedule is about to blow up.  When an easy dinner is a must, these Pesto Chicken Burgers are great for busy weeknights.  A+ if you have homemade pesto, but perfectly fine with the jarred stuff.  These burgers cook up quick on the grill or on a stove top griddle. 

Resources:

  • Grill or grill pan
  • Large bowl for mixing
  • 2 plates – one for raw meat and one for cooked meat
  • Grill spatula
  • Clean hands! 

Procurements:

  • 1 lb. ground chicken
  • 4 T. prepared pesto
  • 1 t. balsamic vinegar
  • 1/4 t. red pepper flakes
  • Salt & pepper to taste
  • 4 burger buns

Operating Procedures:

With your hands, gently mix all the ingredients together, sans buns, until just combined.  Ground chicken can be rather soft, so don’t overmix!  Form the meat into 4 patties and let them sit for a bit while the grill heats up.  Cook the burgers on medium/high heat for about 5-8 minutes on each side or until done!

Proposals:

I like to serve my chicken burgers up on whole wheat buns with a slice of smoked provolone, a smear of extra pesto, and of course, lettuce and tomato.  If you’re more of a traditionalist, top as usual with ketchup and mustard!

Closing Remarks:

These burgers have so much flavor!  If you love pesto, they will become a weeknight favorite!

 

Pesto Chicken Burgers
Serves 4
Ground chicken mixed with store bought pesto, balsamic vinegar, and spices.

Ingredients
  1. 1 lb. ground chicken
  2. 4 T. prepared pesto
  3. 1 t. balsamic vinegar
  4. 1/4 t. red pepper flakes
  5. Salt & pepper to taste
  6. 4 burger buns, toasted
  7. Cheese, optional
Instructions
  1. Gently mix together the chicken, pesto, vinegar, and seasoning until just combined. Form the meat into 4 patties.
  2. Grill the burgers on med/high heat for about 5 minutes on each side.
