Introduction:

We just booked a cruise for mid-June, and we are all looking forward to it.  Preston, in particular, is beyond excited and insisted we make a count down 70 some days in advance!  Pretty much every time he bites into something tropical (flavors of pineapple, coconut, etc), he insists that it “tastes just like Grand Turk” – one of the stops on our cruise.  🙂

These “Put the Lime in the Coconut” Rice Krispies Treats do in fact taste like Grant Turk.  Tee hee.  Melted white chocolate chips bind the sweet shredded coconut to the lime flavored treats.  Kid approved as you can see!

 Resources:

  • 8X11 dish
  • Large pot
  • Stirring spoon
  • Spatula
  • Large measuring cup – I use this one for everything!
  • Large knife
  • 2 small bowls
  • Parchment paper or Silpat Mat

Procurements:

  • 5 c. Rice Krispies Cereal
  • 1/2 stick of salted butter, which yields 1/4 c. plus a pat or two to grease the 8X11 dish 
  • 40 marshmallows, or 1 10 oz package
  • 1.4 oz. lime gelatin
  • 1 c. white chocolate chips or white chocolate melts
  • 1 c. sweetened shredded coconut flakes

Operating Procedures:

Make sure you use a pot large enough to accommodate the first 4 ingredients.  On the stovetop on medium heat, add the 1/2 stick of butter to the pot and stir until melted.  Next, add the marshmallows and gelatin, stirring until combined.

Mix in the Rice Krispies and stir until the marshmallow mixture is completely incorporated.  Working quickly with a buttered spatula, add the treats to a buttered dish and pat down until they are worked evenly into the dish.  Let them cool completely.

Once cooled, pop the treats out of the dish and cut into pieces.  I find it easiest to use a large sharp knife lightly coated in butter.  In a microwavable bowl, melt the white chocolate in the microwave, one minute at a time on half power.  Add coconut to a 2nd bowl.  Dip the treats in the chocolate, and then in the coconut.  Place on parchment or Silpat Mat until the chocolate has hardened.  You can pop them in the fridge if you are in a hurry!

Closing Remarks:

You could play with a million combinations of different flavored gelatins and even swap out the white chocolate for milk or dark chocolate.  Make them your own!  Enjoy!
