Few things in this world are more delicious than garlic.  Ok.  Maybe one thing…roasted garlic!  For those of you who have not tried roasting it, you are missing out!  It’s really my favorite way to prepare garlic.  The cloves of the roasted garlic pop right out of their skins and are creamy, sweet, and spreadable – a perfect addition to dressings, spreads, or my favorite, butter.  Just last week I added these to my loaded mashed potatoes, a recipe I’ll share soon! 



  • 1 stick of salted butter, brought to room temperature
  • 1 head of garlic
  • 1 t. olive oil
  • Pinch of salt

Operating Procedures:

Preheat the oven to 350 degrees.  Start by cutting off the top quarter (pointy side) of the garlic head so that the cloves are exposed. 


Drizzle the top of the cloves with 1 t. of olive oil and a pinch of salt.  Loosely wrap the garlic in aluminum foil, place on a baking dish, and bake for 45 minutes.  Remove from the oven and unwrap the garlic and allow to cool enough to handle.  Once manageable, squeeze the cloves from the head and mash with a fork in a bowl. 


Allow to cool completely.  Finally, mix your room temperature butter with the cooled garlic.  Allow to sit for at least a few hours for the flavors to marry.  Spread on everything! 


This makes fantastic garlic bread – just spread one sliced French bread, wrap in foil, and bake!  Or kick up your grilled cheese by using this roasted garlic butter on the outside of the bread.  Dress your pasta with a melted dollop.  Really this makes a great substitution for any recipe calling for plain old butter. 

Closing Remarks:

With Thanksgiving next week, I’m posting this just in time.  This roasted garlic butter is a necessity on the table!  Add them to your mashed potatoes, stuffings, or rolls!

Great substitution for regular butter in all of your favorite recipes! Makes a great spread on butter or pasta.

  2. Cut the top quarter off the garlic head, exposing the cloves inside. Cover cloves with 1 t. olive oil and a pinch of salt. Loosely wrap in aluminum foil and bake on a pan for 45 minutes.
  3. Remove garlic from the oven and open the foil pack. Let the garlic cool slightly until cool enough to handle with bare hands. Squeeze the garlic into a bowl and mash with a fork.
  4. Once the garlic has cooled completely, mix with 1 stick of butter. Set aside for at least a few hours to let the flavors marry before using.
