For awhile now, a friend of mine has been telling me about a crustless quiche that she makes.  She fills hers with cherry tomatoes, sautéed spinach, and feta.  I had been wanting to try it for sometime and finally a few weeks ago, I had the chance to put it together, with my own twist. 

With my hectic schedule, the week I decided to try this, I hadn’t been to the grocery store, so I pulled some sausage from the freezer and found whatever cheese I could on hand, which happened to be blue.  Voila!  In under in hour, this Sausage & Blue Crustless Quiche became a new favorite recipe!  I’ve already made it about 3 more times with different combinations…pepporoni & mozzarella, and bacon & cheddar.  All tasty, but still, I think the sausage and blue cheese is my favorite. 




  • 12 oz. of hot sausage crumbles, cooked and cooled
  • 1/2 c. blue cheese
  • 4 eggs
  • 1 c. milk
  • 1/2 c. Bisquick, or baking mix of your choice
  • 1 scallion, chopped
  • Pinch of salt
  • Dash of pepper

Operating Procedures:

In a mixing bowl, scramble the eggs, Bisquick, milk, and s&p with a whisk.  Fold in the hot sausage, blue cheese, and chopped scallions.  Grease your pie plate generously with cooking spray before adding the egg mixture to it.  Cook the quiche at 350 degrees for 35-40 minutes.

I like to serve mine up with a dollop of plain Greek yogurt or sour cream.


Closing Remarks:

This quiche reheats well in the toaster oven, but even tastes great cold.  I eat this for breakfast, lunch, or dinner.  My 2 year old even loves it!

  1. 12 oz. cooked and crumbled hot sausage
  2. 1/2 c. blue cheese crumbles
  3. 1 c. milk
  4. 1/2 c. Bisquick
  5. 4 eggs
  6. 1 scallion, chopped
  7. salt and pepper to taste
  1. In a mixing bowl, whisk together eggs, milk, Bisquick, salt and pepper. Fold in cheese, sausage, and scallions.
  2. Add mixture to a greased pie plate.
  3. Cook at 350 degrees for 35 minutes.
