Introduction:

Weekday mornings can be crazy hectic in our house.  Getting myself up and awake, as well as the kids, lunches made, dog out, every one clothed, teeth brushed, shoes on, all before dropping off at 2 different daycares.  Of course within that hectic routine comes breakfast! 

Although we serve up our fair share of Eggos, one thing that makes mornings less crazy is to have breakfast prepped in advance.  Often times, we’ll make a double batch of pancakes on the weekend to get the kids through the week ahead.  Other times though, particularly when the weather is cold, I love to make a batch of these Spiced Cider Steel Cut Oats to feed them all week.

Procurements:
  • 2 c. apple cider
  • 2 c. water
  • 1 c. steel cut oats
  • 2 T.  brown sugar
  • 1 T. butter
  • 1 t. cinnamon
  • 1/2 t. salt
  • 1/8 t. ground cloves
  • 1/8 t. ground nutmeg, or about 20 grates if using fresh
  • 1/8 t. ground ginger
  • 2 T. half and half
 
Operating Procedures:
 
On the stovetop, in a medium saucepan, bring the apple cider and water to a boil.  Turn the heat to med/low and stir in the oats.  Stirring occasionally, let the oats simmer for 25-30 minutes.  In the last 5-10 minutes you will need to stir the oats more often to avoid sticking.

Turn off the heat and stir in the remaining ingredients.  Serve up immediately or refrigerate for the week ahead.

Proposals: 
 
Reheat in the microwave with an extra pat of butter and a sprinkle of cinnamon.  Sometimes I also julienne an apple and add to the mix in the last 2 minutes of cooking.

 Closing Remarks:
 
This oatmeal warms you from within and I swear my kids can’t get enough of it.  It fills and fuels them for a full day of learning and playing!
