Introduction:

It’s been quite a while since I’ve been on here to post!  February, it seems, as many of my friends have pointed out!  By some miracle, I seem to have a little extra time on my hands today (pause:  to get more water and add kid’s breakfast #2 to the microwave) and thought I’d get back into the swing of things.  Surprisingly, I actually still remember how to log in and (pause:  getting said breakfast #2 out of the microwave for the kids) maneuver through all the technical difficulties that comes with blogging!

After a week vacation in Siesta Key, I came back with the usual post vacation “I’m only eating salad for the next month” mind set.  So this week, I whipped up this (pause: “Mommy can I…Mommy what is…Mommy I’m going to…) vinaigrette to deviate from the usual bottled dressing.

Resources:

  • Knife
  • Small skillet or saucepan
  • Spatula
  • Blender
  • Mason Jar

Procurements:

  • 1 c. quartered strawberries
  • 1/2 c. balsamic vinegar
  • 1/2 T. fresh basil leaves
  • 1/2 c. olive oil
  • 2 t. water
  • 1/2 t. fine sea salt
  • fresh cracked pepper

Operating Procedures:

Add strawberries and vinegar to a small skillet and let simmer on low heat, stirring with a spatula occasionally, for about 10 minutes.  You want the vinegar to thicken and reduce in half. 

Once thick and syrupy, turn off the heat and add the basil to the mixture, letting it steep for about another 10 minutes. 

At this point, the mixture will have cooled enough to add to the blender with the water, salt, and pepper.  With the blender on low, slowly pour in the olive oil and mix until emulsified.  Add to a mason jar and enjoy.  Refrigerate any remaining dressing. 

Proposals:

I like to add this to a salad topped with feta, fresh sliced strawberries, grilled chicken, and slivered almonds!

Closing Remarks:

This yields about a cup of dressing.  It is a thick vinaigrette.  Add additional water or oil, as needed, to thin to your desired consistency while in the blender.

Instructions

  2. Add the slightly cooled mix to the blender with the water, salt, and pepper. With the blender on low, slowly pour in the olive oil and mix until emulsified. Add to a mason jar and enjoy.
