Introduction: 

I almost always buy a 6 pack of bell peppers when shopping at Sam’s club, which is more often then I’d care to admit.   My family loves them, they stay fresh for quite some time, and the package comes with only red, orange, and yellow varieties!  The green ones just aren’t my style, as bell peppers are so much sweeter and tastier, in my opinion, when fully ripened to red!  The red variety also pack 9 times more lycopene and twice as much vitamin C as the green ones!   

This Stuffed Pepper Bolognese is one of my go-to uses for bell peppers.  It’s a simple meal made with staple ingredients that I almost always have on hand, which makes it an easy weeknight dinner, even when there is literally almost no food in the house!

  • 3 bell peppers, sliced into half inch thick strips
  • 1 sweet onion, also sliced into half inch thick strips
  • 1/2 T. olive oil
  • 1 lb. ground beef
  • 1 t. Italian seasoning
  • 28 oz. can crushed tomatoes with garlic
  • 1/2 t. salt + a couple pinches

Operating Procedures:

With the skillet preheated on high with 1/2 tablespoon of olive oil, add the onions, peppers, and a dash of salt.  Stir infrequently, about 2-3 times, over the next 10 minutes until slightly tender and blistered.  Once tender, transfer the onions and peppers to a plate to rest.  With the same skillet back on high heat, add the ground beef and another pinch of salt, and brown completely.  Again, try not to stir to often to allow the meat to caramelize!  Once the beef is cooked through, turn the heat to low, add back the peppers, and stir in the Italian seasoning, crushed tomatoes and 1/2 teaspoon salt.  Cover with the lid and let simmer for about 10-15 minutes until the flavors come together.

We like to serve this sauce up over Oven Baked Rice and top with parmesan or cheddar cheese.

Closing Remarks:

I like to call this recipe Stuffed Pepper Bolognese because it has almost all the same ingredients as stuffed peppers, but with half of the effort!  A friend introduced a modified version of this recipe to me years ago and ever since it has become a family favorite.
