Introduction:

One of my closest friends, Lisa, shared this taco pie recipe with me years ago.  We have tweaked it over time and it has become one of our family favorites.  I consider myself a pretty good cook who is competent of making (or trying to make almost anything!), yet this simple supper is what my husband asks for on his birthday most years!

Resources:

  • Measuring cups (wet)
  • Sauté pan
  • Wooden spoon
  • Pie plate (preferably glass)

Procurement’s:

  • 1 lb ground beef
  • 2 t. olive oil
  • Packet taco seasoning
  • 3/4 c. water
  • 1 can crescent roll dough
  • 3 c. crushed Dorito’s (original flavor)
  • 1 c. sour cream
  • 2 c. shredded cheese (cheddar or taco blend)

Operating Procedures:

Preheat oven to 350 degrees.  Remove crescent rolls from container and press into pie shell, being sure to press seams together. Some stores also sell crescent roll sheets that you can purchase and then you don’t have to worry about the seams! Pre-bake the pie shell for about 10 minutes to give it a head start before you put in all the extra toppings. Set aside to cool.

While the pie shell is pre-baking, pull out your sour cream to take the chill off of it to make it easier to spread.

Next, heat olive oil in a medium sauté pan and brown ground beef until fully cooked through.  Drain off any excess fat (I use 90/10 ground beef, so I usually don’t have anything to drain off!)  Sprinkle in packet of taco seasoning and add water.  Mix to combine and simmer over low heat for about 3 minutes for the mixture to combine and the flavors to meld.

Take half of the crushed Dorito’s and lay them over the bottom of the crust.  Next, top the Dorito’s with the taco meat mixture.  Then, spread your sour cream over your meat mixture.  Put the shredded cheese over the sour cream, and finally top with the rest of the crushed Dorito’s.

Bake the pie for another 20 minutes, until the pie shell is fully cooked and all layers are heated through.  Remove from oven and let stand for 5 minutes before slicing.

 Proposals:

I usually serve this with Mexican rice or a green salad. If we have any leftovers, I will cut it into slices and freeze them individually for quick lunches!

Closing Remarks:

If the crushed Dorito’s look like they are getting too brown on top, just tent a loose piece of foil over the top for the last few minutes cooking time.
