Introduction:

My sister in law, Lisa, shared this Unfried Chicken recipe with me years ago and it is delicious! I have made a few flavoring tweaks here and there, but you can add whatever you want to the coating mix! It is delicious and healthy, an added bonus!

Resources: 

  • bowls for coating
  • rimmed baking sheet

Procurements:

  • 6-8 boneless chicken thighs (or breasts if you prefer)
  • 2 c. Cornflake crumbs
  • 1/2 t. paprika
  • 1/2 t. garlic powder
  • 1/2 t. onion powder
  • 1/2 t. salt
  • 1/4 t. pepper
  • 1/4 t. cayenne pepper
  • 1 c. plain or Greek yogurt

Operating Procedures:

Preheat oven to 400 degrees and spray rimmed baking sheet with non stick cooking spray.  Next wash and dry chicken thighs using cold water.  Mix the cornflake crumbs and spices in a bowl and set aside. Salt and pepper chicken and then coat with the plain yogurt.  Dredge the yogurt coated chicken in the crumb mixture and put on prepared rimmed baking sheet.  Put pan of chicken in the refrigerator for 15 mins.  Remove from fridge and bake in over for 35-40 minutes, turning halfway through.  Chicken should register 165 degrees with a digital thermometer. Remove from oven and enjoy!

Proposals:

I often serve this with homemade mac and cheese.  It is also fabulous the next day over salad.

Use any spice mixture you want! This can be tailored to meet your families favorite flavors.

  7. Put the chicken in the refrigerator for 15-20 mins to set
  8. Remove chicken from refrigerator and cook for 35-40 minutes, flipping chicken half way through cooking time. Chicken should have an internal temperature of 165 degrees.
